Honey is the nectar of flowers collected by honey bees. It is a sweet substance found in many forms, including honey, molasses, and syrups. It is the second most-used sweetener after sugar and is a very effective alternative for people who have diabetes.
Raw, unprocessed honey has a mild, somewhat bitter taste and a dark yellow to amber colour. When honey passes through the digestive system of the bee, its taste improves, and the honey turns darker and oranger. It will be more palatable to humans when in the honey bee's stomach for a longer period of time.
We have 5 different types of honey from the Middle East, each with a particular flavour and colour.
Each type of honey has a specific “grade” depending on how much processing it has undergone. It determines its sweetness, what happens when exposed to air and how long it will last. Honey contains dozens (if not hundreds) of different vitamins and minerals, including antioxidants, enzymes, and flavonoids.
